Dallas Millionaire Pie
(From The American Gourmet Collection Cookbook)
2 well-beaten Eggs (or equivalent amount of “Egg Beaters” egg substitute)
1/2 cup Butter, softened
3-oz. Cream Cheese, softened
2 cups Confectioners Sugar
1 teaspoon Vanilla
1/2 pint (1 cup) Whipping Cream
1 8-oz. can Crushed Pineapple
1 cup chopped Pecans
1 Baked 9-inch Pie Crust
1. In a small bowl, beat together eggs with an electric mixer until thick and lemon-colored (this may take 5 to 10 minutes, but this step in essential to assuring the proper consistency for the pie).
2. In a large mixing bowl, cream together butter and cream cheese. Add sugar, well-beaten eggs, and vanilla. Mix until smooth and pour into pie shell.
3. In a medium bowl, gently fold pineapple and pecans into whipped cream. Spread evenly over top of pie. Chill and serve. Serves 6.
